Prepare ribs. Remove membrane from back side. Remove any broken ends or loose bone fragments.
Apply light coat of yellow mustard by hand. Then apply dry spice rub. Refrigerate until about 30-60 minutes prior to cooking.
Heat grill to high. Put ribs on grill under direct heat. About 2 minutes per side, or until you see some darkening on the ribs. Remove.
Add ribs into a cooking pot. You may have to cut the rack of ribs in half.
Cook at 300-350 for one hour.
Lower temp to 200-225 for two hours. After one hour, remove ribs from Sun Oven and apply your mop sauce (optional). Put back into Sun Oven for the rest of the time.
