Solar Braised Potatoes

Solar braised potatoes couldn't be easier to make!

Solar Braised Potatoes Recipe

Just spread the spuds out in a single layer in a cast iron pan; small varieties such as petite fingerlings, petite gold, or butterball work best.

Toss in some garlic or onions. Bacon is great too! Add enough water or broth to reach about halfway up. Drizzle with olive oil or dot with butter. Add bay leaves, rosemary, or other herbs. Season with salt and pepper to taste.

Cover and braise in the Sun Oven until the potatoes are tender. A few minutes on the stove over high heat to let the remaining water evaporate completes the dish.

Equipment

  • 1 Solar Oven

Ingredients
  

  • 1.5 lbs Petite potatoes (gold, fingerling, red, or medley)
  • 1 tablespoon Olive oil (or butter)
  • 1 tablespoon Rosemary (or herbs of your choice)
  • 2 Bay leaves
  • Salt and pepper to taste

Instructions
 

  • Preheat Sun Oven
  • Add potatoes to shallow cast iron pan. Add water until potatoes are halfway covered.
  • Drizzle with olive oil (or dot with butter).butter. Add bay leaves, rosemary, or other herbs. Season with salt and pepper to taste.
  • Cover and braise in the Sun Oven until the potatoes are tender.
  • A few minutes on the stove over high heat to let the remaining water evaporate completes the dish.

Notes

Optional: Add garlic and/or onion with the potatoes during cooking.
Feel fee to add other herbs and seasonings besides what I list here. Make them to your taste!
